Chili Lime Buttered Corn

In my opinion, grilled corn, slathered with butter, chili and lime is nothing less than ethereal. It is a surefire way to add a little bit of excitement to this classic summer vegetable. Grill the corn however you’d like, whether it’s on the grill outdoors or in a skillet indoors. If you’re craving more heat, feel free to use a spicier chili powder.

Serves 4

4 ears fresh corn, husked
neutral oil
2 tablespoons unsalted ghee or butter
sea salt
½ teaspoon Kashmiri chili powder (or any mild chili powder)
½ teaspoon smoked paprika
1 lime, cut in half

Mix chili powder and paprika in a small bowl, then dip each lime half into the bowl to coat the lime with spices. Rub and squeeze limes on the corn. Serve hot.
