Gruffalo Crumble

Inspired by my kids’ favorite book, this apple crumble has a lime and cardamom twist, perfect with whipped cream or ice cream.

Serves 6–8

6 apples, peeled and diced
2 tablespoons lime juice
1 teaspoon tequila (or vanilla if you prefer, but the alcohol will evaporate during the cooking process)

FOR THE TOPPING:
1 cup oats
1 cup flour (or GF flour)
½ cup sugar or maple syrup
1 stick butter, softened
1 tablespoon ground cardamom

Toss apples with lime and tequila and place in a baking dish.

Combine topping ingredients with your hands or a fork and press over the apples. Bake at 350°F for 40 minutes, until golden and bubbling.
