Après-Ski: Baked Harbison

While raclette and fondue are typically served slope-side for hungry alpine skiers, I say skip the elaborate equipment and opt for a simpler dish.
BAKED HARBISON
Preheat your oven or toaster oven to 350°F. Unwrap a wheel of Jasper Hill’s Harbison. Gently run a knife around the top edge of the cheese, then peel back the rind like a lid.
Bake the Harbison in an oven-safe dish for 18–20 minutes while gathering dippables like potato chips, crackers, chunks of bread, dried fruit and nuts.
Take it up a notch with a generous spoonful of Blake Hill Preserves’ Savory Onion Confit dropped right inside the gooey cheese.
