Tony Maws' Prepared Horseradish

Easy to make at home, prepared horseradish is an important part of the Passover seder table. Use it all year long on sandwiches or potatoes, in cocktails and as an accompaniment to smoked or roasted fish.

7 ounces fresh horseradish root
3 ounces white wine vinegar
3 ounces white wine
2½ teaspoons salt                   
1 teaspoon sugar

Peel horseradish and grate on a box grater. Put grated horseradish in a stainless steel or glass bowl. Immediately add all other ingredients and stir to combine. Store in a glass jar in the fridge until ready to use.
