Green Eggs & Ham Sandwich

Serves 2

4 slices high-quality sandwich bread
1 cup green egg salad
4 thin slices high-quality ham

To make the sandwiches, spread 1 piece of bread with ½ cup egg salad, lay on 2 slices of the ham and with a second slice of bread. Cut in half or quarters. And if your kid insists, cut off the crust.
