1 teaspoon strawberry preserves
10 mint leaves
1 ounce lime juice (Kalamansi if you can find it)
1 ounce rhubarb syrup*
2 ounce Hendrick’s Gin
Shake hard over ice, strain into rocks glass with fresh ice, garnish with mint sprig.
* Rhubarb syrup
1 pound small-chopped rhubarb
1 piece crystallized ginger
3 quarts simple syrup
Bring to slow simmer, take off heat and cover with plastic wrap. Let steep 30 minutes and strain.
