Serves 4

8 ounces apple or pear peel bourbon*
4 teaspoons honey
3 ounces lemon juice
16 ounces hot water

Combine all ingredients in pre-warmed 1-quart Thermos. To serve, pour into8-ounce mugs and  garnish with star anise.(You can also combine all ingredients except the water ahead of time, and then add hot water when you’re ready to serve.)

2 pounds apples or pears
1 bottle of bourbon (750 milliliters)
1 cinnamon stick
1 star anise
2 cloves

Peel apples or pears. Combine peels and bourbon and let sit at room temperature for at least 5 days. Add spices and let sit for 1 additional day. Strain.
